Korongo is a coffee produced by small farmers in southern Tanzania, in the regions of Mbozi, Mbeya and Mbinga. The name "Korongo" means "flamingo" in Swahili, in reference to the birds that inhabit this area.

This lot is part of IMPACT, Sucafina's responsible sourcing program. IMPACT seeks to improve farmers' incomes and promote sustainable agricultural practices by providing access to financing, agronomic training and differentiated markets. In these regions, farmers working with IMPACT have adopted soil conservation, crop planning, and water management techniques, improving both the quality of the coffee and the living conditions of the communities.

Process
Harvesting begins with careful hand-picking of ripe cherries in the field. After pulping, the coffee is fermented in tanks for 12 to 18 hours, followed by a meticulous Washed to separate the beans by density. The parchment is then sun-dried on raised beds for approximately two weeks, depending on the climate, until it reaches the optimum moisture level for storage and export.
